These goat cheese truffles are so delicious and are pretty simple to make!
What you'll need!
6 ounces bittersweet chocolate (I actually 4 ounces of bittersweet and 2 ounces of 100% dark chocolate)
6 ounces goat cheese
1/4 cup confectioners sugar
1/2 teaspoon vanilla exctract
1/4 cup cocoa, espresso, etc. to roll truffles in
On a double boiler on low heat melt the chocolate, being careful not to burn it.
Meanwhile mix together goat cheese, sugar, and vanilla until smooth.
Once the chocolate is completely melted add to goat cheese mixture and mix until well incorporated. (Note: I have found that it is better to not over mix it or use the whisk attachment on the mixer).
Spread chocolate goat cheese mixture onto a cookie sheet or something of the sort, and refrigerate until hard.
Once chilled use a teaspoon to scoop out chocolate and form into balls. Roll the truffles in ground espresso or cocoa powder and enjoy!
