Pear and Goat Cheese Tart / by Sophia Duccini

I have always loved the combination of pears and goat cheese so I decided to use up some pears I had lying around the house! Today I improvised on one of my favorite tart recipes, which you can find here! I didn't have all the ingredients necessary for the crust so I used a puff pastry.

Crust: Frozen puff pastry sheet (or your favorite crust recipe)

Filling: 3-4 medium pears thinly sliced 

1/4 c sugar

1/2 tsp cinnamon

honey chevre goat cheese

chopped or sliced almonds

preheat oven to 350 degrees 

line baking sheet with parchment

Let puff pastry thaw and spread a thin layer of honey goat cheese. Set aside.

In a bowl combine sugar and cinnamon. Toss sliced pears until well coated. (for a healthier version you could skip this step and drizzle the pears with honey instead)

Layer the pears onto the puff pastry (leaving about half an inch for a "crust")

Sprinkle some more goat cheese and chopped almonds on top, and bake until the puff pastry is puffed and golden brown.
